Easy Beignets Recipe

But what is a beignet? They resemble a fried dough that makes donuts proud with a generous sprinkling of confectioners’ sugar. Although sometimes spelled “beignets,” beignets are a French creation that gained widespread popularity, especially at the famous Cafe du Monde in downtown New Orleans. Dough cubes, deep fried and generously coated with confectioners sugar. For the best experience, enjoy hot with a cup of coffee or a classic cafe or latte!

Although originally from France, the love of beignets resonated in New Orleans with the popular Princess and the Frog audio CD.

Take a virtual vacation to New Orleans with these adorable beignets as a precursor to my upcoming trip. While I can’t say they match the perfection of Cafe du Monde’s offerings (perhaps the pinnacle of New Orleans beignets), I can confidently say they come very close. Consider this version of my copy of the Cafe du Monde recipe!

Get ready to taste the crispy, delicious and shiny golden brown beignets right out of the pan. Dust them with powdered sugar and serve this delicious treat hot!

While many beignets recipes rely on a yeast-based dough, this recipe is different with choux pastry dough, reflecting true New Orleans style. The result? The beignets are eggy, light and utterly delicious – each adorned with a golden brown crust and generously dusted with powdered sugar.

How to make Beignets

  1. Prepare the following ingredients: yeast, shortening, sugar, milk, egg whites and flour. Heat the oil in a large, deep pan and insert a thermometer into the side.
  2. In a medium bowl, combine 2 tablespoons warm water, ½ teaspoon active dry yeast, and a pinch of sugar. Stir the mixture and let stand for 5 minutes until thickened.
  3. In a separate bowl, whisk together 2 tablespoons shortening, 1 tablespoon sugar, 3 tablespoons milk, and egg whites. Slowly add 3 tablespoons of boiling water while mixing briefly. Use a thermometer to make sure the temperature is between 110-115 degrees Fahrenheit, then add the yeast mixture.
  4. Once combined, add 1 ¼ cups flour and a pinch of salt. – Knead the dough well, cover with plastic wrap and leave in a warm place for 1 hour. The batter can be made up to 3 days ahead and refrigerated. Let rest at room temperature until easy to roll.

Meanwhile, heat the oil to 360°F.

  • Place the dough on a surface and gently roll it into an 8-inch x 4-inch rectangle. Use a pizza wheel to make 8 slices or 4 large baguettes.
  • When the oil reaches 360 degrees, add 3 pieces of flour. Fry for 1-2 minutes, turn and fry for another minute. Place the fried dough on a wire rack to remove excess oil, then add powdered sugar. Make sure the oil temperature is close to 360 degrees and repeat the process with the rest of the batter.
